DIY Unicorn Cake

 

Today we are making a SUPER-FUN unicorn cake. This cake is so magical and it's super easy to make! 

This was actually my 4th homade cake, and it tuned out perfectly! I think if you're a complete beginner you will be able to make this! 

For this recipe you can use a box cake mix or a from scratch cake. I made a cake recipe for this.

Let's get on to the cake!

You will need:
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • ⅛ teaspoon salt
  • 1 stick (4 ounces) salted butter, at room temperature
  • ¼ cup solid vegetable shortening
  • 1 ½ cups sugar
  • 2 teaspoons vanilla extract
  • ¼ teaspoons almond extract
  • 5 large egg whites
  • ¾ cup whole milk
  • ¼ cup rainbow sprinkles

  • 2 Sticks of butter, softened
  • 6-8 cups powdered sugar
  • 1 tsp. Salt
  • 2 tsp. Vanilla

  • Pink, yellow, purple, yellow, black food dye
  • Ice cream cone
  • White chocolate candy melts
  • Gold sanding sugar
____________________________________________________
  • Piping bags
  • Scissors
  • 6' cake pans
  • Baking paper
  • Cookie sheet
  • Cake stand

Instructions: 
  1. Preheat oven to 350ºF. Grease and line three six-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, use an electric mixer to beat butter, shortening and sugar until light and fluffy.
  4. Add egg whites one at a time, beating well after each addition. Beat in vanilla and almond extracts.
  5. On low speed, alternate adding the flour mixture and milk to the butter mixture, beginning and ending with the flour. Fold sprinkles into the batter.
  6. Divide batter evenly between cake pans bake for 30 to 35 minutes.
  7. Once cakes are fully cooled, level them with a cake leveler.
  8. Stack cakes on a cake board, making sure to frost between each layer.
  9. Use a cake turntable to smooth white frosting over the entire cake
Decorating Time!
  1.  Stack the cakes on top of a cake stand. Add a good amount of frosting in between the layers.
  2. Frost the entire cake white.
  3. Place the horn in the middle of the cake.
  4. Add the ears next to the horn.
  5. Frost dollop's down the side and around the horn with the different colors. 
  6. Pipe on the eyes and done!
How to make the decorations:

Horn: Dip the ice cream cone in candy melts. Roll in sanding sugar. Cool. 
Ear: Dye candy melts half pink. Make ears by piping them into in ear shape. Cool.
